Bang Bang Chilli Pesto Cauliflower

A starter? Antipasti? Side dish? It’s all three! Our Vegan Chilli Pesto packs all the flavour and heat you need to turn this humble cauliflower into an Asian Fusion delicacy suitable for everyone, including those on plant-based and dairy-free diets.

Ingredients

  • 1 cauliflower, broken into florets
  • 1 red onion, roughly chopped
  • Drizzle of olive oil
  • ½ jar Sacla’ Vegan Chilli Pesto
  • 100g gluten-free breadcumbs, lightly toasted
  • Sauce
  • ½ jar Sacla’ Vegan Chilli Pesto
  • Drizzle of maple syrup
  • 2-3 spring onions, white and green tops, finely chopped for serving
  • Coriander leaves for serving
  • Sea salt for seasoning
  • Freshly ground black pepper for seasoning

Method

Step 1

Preheat the oven to 200°C/180°C fan. Add the cauliflower and red onion to a roasting tin, toss with the Sacla’ Vegan Chilli Pesto and olive oil and season with sea salt and freshly ground black pepper. Roast in the oven for about 20-30 mins or until golden and crispy. Sprinkle over the breadcrumbs for the last 5 mins.

Step 2

Mix together the Vegan Chilli Pesto and maple syrup and toss a little over the cauliflower as it comes out of the oven.

Step 3

Transfer the cauliflower into a serving bowl, top with the spring onion and coriander leaves and spoon a little more Pesto mix on top. Put the remainder in a small bowl and serve on the side. Dig in!
