Sacla’ Sun-Dried Tomato Pesto has weeks of warm Italian sunshine squeezed into every jar. (*Sunglasses advised)

It took a while to find the perfect amount of time to sun-dry our tomatoes. Too little, not enough flavour. Too much, not juicy enough. Eventually, with full bellies, we happily settled on 7 days. We then pounded our perfectly sun-dried tomatoes into our authentic Italian recipe with fresh basil, Parmigiano Reggiano PDO cheese, Pecorino cheese, a dash of olive oil, cashew nuts and pine nuts and popped it in a jar.

Over to you! With this vibrant red pesto, you can’t go wrong. Smooth over the base of a tart and top with roasted Mediterranean vegetables, stir through freshly cooked pasta (we love conchiglie pomodoro) and top with grated parmesan and spoon into soups for extra depth and warmth.

How long does Pesto last once opened?

As Sacla’ Pesto is pasteurised, there is no need to store unopened jars of Pesto in the fridge. Simply use them before their ‘Best Before’ date. Opened jars should be kept in the fridge and can be eaten safely for up to 2 weeks without risk or noticeable loss of flavour.

Does Pesto freeze well?

Sacla’ Pesto can be stored in a home freezer for up to a month without any noticeable loss of flavour. Pesto can be frozen for longer (up to 6 months), but it will lose some flavour in this time. When used in a sauce or marinade, for example, this will hardly be noticed.

Is Pesto pasteurised?

Once the carefully selected, high-quality ingredients in Sacla’ Pesto have been expertly combined in the correct proportions, the mixture is dispensed into jars. These jars are then vacuum sealed for a perfect airtight seal, before being pasteurised for your protection using a mild heat treatment.
