Quick Cheat's Minestrone

Serves 2

Ingredients

  • 350g jar Sacla’ Whole Cherry Tomato & Basil Sauce
  • 600ml vegetable stock, hot
  • 100g stellette pasta (small soup pasta)
  • 200g mixed frozen beans
  • ½ Sacla’ Classic Basil Pesto
  • Grated Parmesan to serve
  • Toasted ciabatta to serve
  • Salt to taste

Method

  1. Heat Sacla’ Sauce in a deep sauce pan
  2. Add the stock and pasta and simmer for 5 minutes until pasta is completely soft
  3. Add frozen beans and cook for another 2-3 minutes
  4. Serve in bowls with Sacla’ Pesto spooned over the top
  5. Serve topped with Parmesan and toasted ciabatta on the side
