Ever tried glorious giandujotti? They’re smooth chocolates from the North West of Italy made with soft gianduja (chocolate and hazelnut) paste. Although Italians traditionally crammed them in to cut costs, the hazelnuts give each ingot an irresistibly nutty flavour.

For that luxurious taste, the chocolatiers select the finest Piedmont hazelnuts and use a strong cocoa paste. This also makes every mouthful more intense than typical Piedmontese chocolates.

Today, D. Barbero is owned by Davide. There is a small museum in the factory sharing his family's history since 1883 and there is a even a permanent line on the wall, a poignant reminder of the water level from the devastating 1994 flood which destroyed all the confectionary for Christmas that year.

WHERE THE MAGIC HAPPENS
The upper floors of the building are home to shining copper bowls. They’re full of honey, egg whites, almonds and local hazelnuts mixed and stirred into a pearly and fragrant sticky mass. D.Barbero’s torroncini is steamed for 7 hours, it’s shaped, cut and cooled on marble tables by hand.
