Rice Salad with Reduced Fat Pesto Dressing
A bright, summery vegan salad that's full of goodness. Our Reduced Fat Pesto Dressing lets you enjoy all that Italian pine nut and basil flavour in a healthy way. Don't forget a generous squeeze of lemon for a zesty finishing touch.
- 250g Basmati Rice
- 200g peas
- 1 orange pepper, diced
- 1 chopped spring onion
- 2 tbsp Sacla' Reduced Fat Basil Pesto
- 1/2 lemon, juiced
- 1 handful flat leaf, partly chopped
- Salt & pepper to taste
- Cook the rice according to packet instructions.
- When the rice is ready, add it to a bowl with the peas, pepper, spring onion and mix in the Sacla' Pesto.
- Drizzle the lemon juice over the top, add a sprinkle of parsley, season to taste and serve.
