Rice Salad with Reduced Fat Pesto Dressing
A bright, summery veggie salad that's full of goodness. Our Reduced Fat Pesto Dressing lets you enjoy all that Italian pine nut and basil flavour in a healthy way. Don't forget a generous squeeze of lemon for a zesty finishing touch.

  • 250g Basmati Rice
  • 200g peas
  • 1 orange pepper, diced
  • 1 chopped spring onion
  • 2 tbsp Sacla' Reduced Fat Basil Pesto
  • 1/2 lemon, juiced
  • 1 handful flat leaf, partly chopped
  • Salt & pepper to taste

How to make the recipe

  1. Cook the rice according to packet instructions.
  2. When the rice is ready, add it to a bowl with the peas, pepper, spring onion and mix in the Sacla' Pesto.
  3. Drizzle the lemon juice over the top, add a sprinkle of parsley, season to taste and serve.
