Open Sourdough Sandwich with Reduced Fat Basil Pesto

  • 3 slices sourdough 
  • 3 tbsp. low fat Cottage Cheese 
  • 3 tbsp. Sacla’ Reduced Fat Basil Pesto 
  • 2 spring onions, white only, finely chopped 
  • 3 tomatoes, sliced and halved 
  • Basil leaves to garnish 


  1. Smother the cottage cheese over the sliced sourdough then spoon over the pesto and top with tomato slices and spring onions. 
  2. Drizzle with a little more pesto and garnish with basil leaves.
