Open Sourdough Sandwich with Reduced Fat Basil Pesto
How about a healthier lunch option that's still packed with flavour? Try spooning Sacla' Reduced Fat Basil Pesto over cool, creamy cottage cheese for a sandwich that shouts 'Italy'.
- 3 slices sourdough
- 3 tbsp. low fat Cottage Cheese
- 3 tbsp. Sacla’ Reduced Fat Basil Pesto
- 2 spring onions, white only, finely chopped
- 3 tomatoes, sliced and halved
- Basil leaves to garnish
- Smother the cottage cheese over the sliced sourdough then spoon over the pesto and top with tomato slices and spring onions.
- Drizzle with a little more Pesto and garnish with basil leaves.
