Char-Grilled Aubergine Pesto Chicken Skewers
Make barbecue vibes last all year with these summery skewers. Sacla' Char-Grilled Aubergine Pesto adds a smoky flavour to chicken breast, speared with lime and then on a griddle – or over an open flame, if the weather's right.

Ingredients
- ½ jar Sacla’ Char-Grilled Aubergine & Roasted Garlic Pesto
- 4 breasts chicken
- 12 wooden skewers
Method
- Spoon the Char-Grilled Aubergine Pesto into a bowl
- Slice each chicken breast into 3 strips and add them to the Pesto
- Stir to cover and leave to marinate in the fridge for at least an hour
- Soak 12 wooden skewers in water (to stop them burning)
- Remove the chicken from fridge and thread onto skewers
- Finish each skewer with a lime wedge
- Next heat a griddle or frying pan until it's hot and add the chicken skewers. Cook for 3-5 minutes on each side, until browned and cooked through
