This pork collar is made up of the perfect ratio of lean muscle to fat (around 70:30) which creates a wonderful texture that melts in the mouth! A delicate blend of whole spices is ground into the coppa, including cardamom, cloves and cinnamon to produce a deeply rich flavour - making it ideal for a deluxe dinner party platter!
