The De Vivo family has certain rules when it comes to making their world-famous panettone. No food colourings. No additives. And no rush. That means a leisurely 36 hours of sourdough leavening to ensure the perfect softness, fluffiness and fragrance of every bite. This particular panettone is inspired by an Austrian dessert – filled with a creamy apricot marmalade and vanilla infusion. Then there’s the chocolate: a cocoa-flavoured dough, dark chocolate chunks and dark chocolate icing.
