Our Aubergine Pesto is inspired by the famous ‘Melanzane alla Parmigiano’ – a classic pasta-free Northern Italian dish made with Parmesan, tomatoes, Mozzarella and, of course, fresh aubergines.
Our Pesto is based on the same ingredients, all beautifully blended together with a hint of chilli, to create a smooth and full-flavoured sauce.
It will bring a burst of Italian flavour to any dish, and it’s especially good stirred into vegetables before roasting.
This Pesto recipe is also suitable for vegetarians and vegans .

How to use
With pasta, we think 100g of pasta per quarter jar of Pesto works best or visit our recipe collection for more inspiration.
