A long, thin cut with curved, ribbon edges to scoop everything up, this shape is best when served with more delicate sauces. Although it goes under many different names, it’s now more commonly referred to as mafaldine, named in honour of Princess Mafalda of Savoy who died during the Second World War.

Instructions for Use: Hob. Time 12-15 mins. For best results, place the pasta into a large pan of boiling water. Bring back to the boil and cook for 12-15 minutes. Drain thoroughly and season to taste.
