Pesto Scrambled Eggs
When I’m in need of a quick breakfast (running late for that early morning lecture), scrambled eggs on toast is my go-to meal. It’s so delicious, healthy and quick to make, but it can get a little boring after a while. Adding a spoonful of Sacla’ Pesto gives the eggs an extra burst of flavour with no extra effort. What is really great is that Sacla’ make 7 different flavours of Pesto, one for each day of the week! Breakfast will never be boring again and the Truffle Pesto is a really special treat.

Chicken, Pesto Rice and Spinach
After a hard morning’s work in the library and an even earlier morning gym session, the last thing I want for lunch is a bland sandwich or a dry meal warmed up in the microwave. This is where Sacla’ Pesto comes to the rescue. Such a variety of flavours allows for a lunch of rice, chicken and vegetables prepped the night before, to always be so tasty. It has transformed my tupperware lunch into a meal that is delicious and comforting.
Jacket Potatoes with Pesto Cream Cheese
In my opinion, jacket potatoes are underrated. I love them because they are so easy to make, inexpensive and can be very versatile. Pesto and cream cheese is my favourite combination as I like having a meat-free meal or lunch every so often. All you have to do is bake the potatoes in the oven for around 45 minutes with a criss-cross on the top. Alternatively, cooking the potato in the microwave for 15 minutes is a great time-saving option. When steaming hot, fill with cream cheese and Classic Basil Pesto. Serve with vegetables or salad. Parma chicken with classic Pesto
The journey a student goes on is quite tremendous, especially in how your choice of food evolves. In Year 1 I was wolfing down Pesto Pasta before a night out and now I’m in my final year I’ve suddenly realised I prefer the finer things in life. Either way, Pesto is always there at the heart of cooking. Having friends over on a Friday night to enjoy a glass of wine and a beautiful dinner is what this Parma Ham Pesto Chicken recipe is made for.
