Not your average oil infusion. This is a case of whole lemons being pressed together with the olives to capture the essential oils of lemon zest for a uniquely crisp, clean freshness. Agrumato (from ‘agrumi’ meaning citrus) is the creation of the Ricci family from Abruzzo. It’s they who took an Abruzzese tradition – where farmers celebrated the harvest by crushing whole fruits with freshly picked olives – and bottled it. Thanks to them, we have this premium olive oil that brightens a dish like nothing else.
