Crispy Airfryer Tomato Pesto Gnocchi

INGREDIENTS 

  • 250g Gnocchi
  • ⅔ jar Sacla’ Sun-dried Tomato Pesto
  • 2 tbsp. Olive oil
  • Salt and pepper
  • Basil
  • 1 Garlic Clove, minced
  • 1tsp. Onion granules
  • Sprinkle of grated Parmesan

Airfryer Crispy Tomato Pesto Gnocchi
INSTRUCTIONS 

  1. Drizzle the gnocchi with olive oil in a bowl and toss to coat evenly. Sprinkle with salt to taste.
  2.  Arrange the gnocchi in a single layer in your air fryer basket (avoid overcrowding).
  3. Air fry for 10-12 minutes, shaking the basket halfway through, until the gnocchi is golden brown and crispy.
  4. While the gnocchi is cooking, heat a pan over medium heat. Add a drizzle of olive oil and minced garlic. Sauté for 30 seconds until fragrant. Stir in the Sacla’ Sun-dried Tomato Pesto and cook for another minute.
  5. Toss the cooked gnocchi with the Pesto sauce in a bowl. Garnish with grated Parmesan cheese and fresh basil leaves. Enjoy!
