In Calabria, the so-called ‘toe’ of Italy, the natives go wild for fiery red chillies, and they cram these into their local Italian sausage, or ‘nduja. For this tomato-y pasta sauce, we pack in whole (yes, whole) cherry tomatoes and ‘nduja to create a taste that’s sweet and spicy and oh so Italian.
