Despite the slight change to the recipe, Grisbi  manage to maintain the light, crisp and utterly moreish texture their biscuits are so renowned for. Each bite of the citrus-perfumed shortbread gently crumbles to reveal the smooth and creamy centre, in this case a zingy lemon cream. Ideal served first thing in the morning with a dark-roast espresso (don't knock it till you've tried it), or for snacking on at any time throughout the day.
