Citrus Fruits Colomba 1kg by Sal De Riso


The sourdough for this Colomba cake is made with buffalo milk butter and studded with candied oranges, lemons and mandarins grown along Italy’s Sorrento coast. And it’s all finished off with a drizzle of hazelnut icing.

Colomba di Pasqua is a quintessential part of Italian Easter celebrations and will be back next year.

Sponge Ingredients: 0 and 00 WHEAT flour, fresh butter (13.3%) (MILK), fresh pasteurized EGG yolks (11.1%), water, sugar, natural yeast (GLUTEN), Italian acacia honey, sea salt, MILK powder, BARLEY malt, vanilla beans from Bourbon Island and Tahiti.

Filling Ingredients: Orange peels (17.10%), mandarins (6.20%) and lemons (3.10%) (orange peels, lemons, tangerines, sugar, glucose, water). 

Topping Ingredients: Sugar, EGG white, HAZELNUTS (1.10%), white ALMONDS, 00 WHEAT flour, cornmeal, meal starch, grain of sugar.
