Sal De Riso Italian Colomba cake uses sourdough made with buffalo milk butter and studded with candied oranges, lemons and mandarins grown along Italy’s Sorrento coast. And it’s all finished off with a drizzle of hazelnut icing.

Sponge
Ingredients: 
type 0 and 00 soft WHEAT flour,
fresh BUTTER (16.60%), fresh pasteurized EGG yolks
(11.60%), water, sugar, natural refreshing YEAST (GLUTEN),
acacia honey, sea salt, powdered MILKBARLEY malt,
vanilla beans from the Bourbon Islands and Tahiti.

Filling

 sugar, EGG white, HAZELNUTS (1,10%),
white ALMONDS, 00 WHEAT flour,
cornmeal, meal starch, grain of sugar.
