Perfect Pasta

There’s something unusual about Martelli Penne: they don’t have any ridges. That’s because they don’t need them. At the Martelli family factory in the hilltops of Tuscany, they pass their fine durum wheat flour through bronze dies to achieve a rough, porous texture that absorbs and holds more sauce. They also air dry their pasta – slowly and naturally – to preserve the full flavour of the grain. Finally, they hand-pack the pasta into those striking yellow packets.

Instructions for Use: Hob. Time: 8 mins. For best results, place the pasta into a large pan of boiling water. Bring back to the boil and cook for 8 minutes. Drain thoroughly and season to taste.
