Creamy Smashed Lemon Pesto Potatoes

Ingredients

  • 750g small new potatoes
  • 2 tablespoons olive oil
  • Sea salt
  • Freshly ground black pepper
  • 190g jar Sacla’ Zesty Lemon Pesto
  • 3 tablespoons Crème Fraîche
  • 20g toasted pine nuts
  • 1 tablespoon freshly chopped flat- leaf parsley

How to make the recipe

Step 1

Preheat the oven to 220°C. Lightly oil a shallow roasting tin.

Step 2

Place the potatoes in a large pan of cold lightly salted water. Bring to boil and simmer for 15-20 minutes until tender. Drain well.

Step 3

Place the potatoes in the roasting tin and smash with the base of a saucepan, trying to keep them in 1 piece. Drizzle with the oil and season with  salt and black pepper. Roast for 25-30 minutes until golden and crispy.

Step 4 

Meanwhile place the Zesty Lemon Pesto and Crème Fraîche in a bowl and mix together. Drizzle over the potatoes and return to the oven for 2-3 minutes. Scatter over the pine nuts and parsley and serve immediately.
