Char-Grilled Steak with Pesto Caesar Salad


For the dressing

  • 4 tbsp Mayonnaise
  • 4 tbsp Soured cream
  • 2 tbsp Sacla’ Classic Basil Pesto
  • 1 1/2 tsp Lemon juice
  • 25g Parmesan, grated
  • 1 small Garlic clove, crushed
  • Salt
  • Black pepper

For the steak

  • 4 Steaks
  • Olive oil, to rub
  • Flaked sea salt

For the salad

  • 1 Cos or Romaine lettuce, roughly torn
  • A handful of Croutons


  1. Whisk all the dressing ingredients together in a small bowl, and season to taste
  2. Preheat a griddle pan or large frying pan over a high heat
  3. Rub the steaks on both sides with oil and sea salt
  4. When the pan is really hot, fry the steaks for 3-4 minutes on each side for medium-rare, or until cooked to your liking
  5. Leave the steaks to rest on a board for a couple of minutes
  6. Lightly toss and coat the lettuce with dressing
  7. Divide between serving bowls and scatter over croutons
  8. Cut the steaks into thick slices and arrange on top of the salad
