Speedy Cod Finger Fillets


  • 3 tbsp Sacla’ Coriander Pesto
  • 1 pot Yoghurt
  • 3 Cod fillets
  • 1 Egg, beaten
  • 1 bag of fresh breadcrumbs
  • A squeeze of Lemon, plus wedges to serve
  • Fresh coriander to serve


  1. Stir 3-4 tsp of Sacla’ Pesto into yoghurt and if possible chill for an hour.
  2. Add a squeeze of lemon
  3. Divide the fillets into fish finger sizes and roll in Sacla’ Pesto
  4. Dip the fingers into the beaten egg and coat in breadcrumbs
  5. Fry fingers in your chosen oil and serve with lemon wedges and coriander
