Roasted Chicken Breasts & Pesto


  • 175g x 2 Chicken breast
  • 1 tbsp Olive oil
  • Salt
  • Black pepper
  • 2 tbsp Sacla’ Classic Basil Pesto


  1. Preheat oven to 190°C/375°F/Gas mark 5
  2. Make 3 deep slashes in the chicken breasts with a small sharp knife
  3. Rub the chicken with olive oil and season well
  4. Spoon the Sacla’ Pesto into the little pockets made by the slashes and place in a small ovenproof dish
  5. Roast in oven for 18 minutes until golden and cooked through
