1 jar Sacla' Wild Mushrooms, drained, with a little oil reserved for the dressing
1 onion, peeled and sliced
150g Pecorino or Parmesan Cheese, sliced
4 small mint branches
1 courgette, sliced
extra virgin olive oil
Gently fry the onion and courgette in a pan unitl they become golden brown and soft.
Add all the ingredients to a salad bowl and toss. Add a little oil for the dressing. It's that simple!
