Artichokes have many health benefits - they are a natural detoxifer and help to keep your blood sugar balanced.
300g pack Sacla' fresh Trofie
150ml white wine
2tbsp mascarpone
1 pack Sacla' Classic Basil Pesto or 1/3 jar Sacla' Organic Classic Basil Pesto
285g jar Sacla' Artichoke Antipasto, drained
3 tbsp freshly grated Parmesan
1 Cook the trofie for 5 to 8 minutes in a pan of boiling salted water, until al dente.
2 Meanwhile, heat a large pan and pour in the white wine. Bubble until reduced by half, then lower the heat and add the mascarpone, pesto, artichokes and almost all the Parmesan. Check the seasoning, then when the pasta is cooked, add a tbsp of the cooking water to the sauce, drain the pasta and stir through the sauce. Scatter the remaining Parmesan on top and serve immediately.
This is also great served at room temperature as a buffet dish, or for lunch the next day.
