2 eggs
1 tsp Sacla' Sun-Dried Tomato Pesto
Handful grated Cheddar Cheese
1 Tomato, chopped
Beat the eggs together with a tsp Sacla' Sun-Dried Tomato Pesto. Pour into a hot non-stick frying pan and cook for 2-3 minutes until the edges start to cook. Sprinkle over the cheese and tomato chunks and cook for a further 1-2 minutes. Turn out onto a plate and enjoy. You could add a dollop of pesto in the middle if you fancy.
