Ingredients

200g ready-made all butter puff pastry
plain flour, for dusting
150g mascarpone
4 rounded tblsp Sacla’ Classic or Organic Basil Pesto or Sacla' Fresh Classic Basil Pesto
4 medium tomatoes, thinly sliced, ends discarded
1 rounded tblsp finely grated Parmesan
Few basil leaves, to garnish
salt & freshly ground black pepper

You will also need a lightly greased baking tray.


Instructions

This romantic nibble is the perfect recipe for love.

Halve the pastry, then roll it out on a lightly floured surface to 2mm thick. Cut out 1 x 16cm circle from each, using a small plate as a template. Cut into heart-shapes using a small sharp knife. Lift onto the baking tray, lightly prick with a fork and chill for 30 minutes.

Mix the mascarpone and pesto together in a small bowl and lightly season.

Preheat the oven to 200°C, 400°F, Gas Mark 6.

Bake the pastries on the middle shelf for 8-10 minutes until golden and well risen. Remove from the oven and leave to cool for about 10 minutes. Gently squash the pastries down with your hand, divide the pesto-mascarpone between them, spreading it to the edges. Arrange the tomatoes on top, season and sprinkle with Parmesan.

Preheat the grill.

Grill the tarts for about 1 minute until the tomatoes have softened a little and the pastry and mascarpone has warmed through - be careful the pastry doesn’t burn. Remove to warm dinner plates and garnish with the basil leaves and serve.
