Classic Basil PestoOrganic Basil Pesto
Ingredients

2 tbsp of olive oil 1 onion, finely chopped 2 garlic cloves, finely chopped 130g of pancetta cubes 2 carrots, cubed 4 ripe plum tomatoes, halved, deseeded and roughly chopped 1 litre of vegetable stock 3 medium courgettes, cubed 400g can of cannellini beans, drained 100g of frozen peas 4 tbsp of Sacla' Organic Green Pesto or Classic Pesto 2 tbsp of extra virgin olive oil freshly ground black pepper 4 tbsp freshly grated Parmesan cheese

Instructions

Heat the oil in a large saucepan, add the onion and garlic and saute gently until softened. Add the pancetta and cook for a few minutes more until it all starts to turn that wonderful golden colour. Next tip the carrots, tomatoes, courgettes and stock into the pan and bring to the boil. Simmer gently for about 10 minutes before adding the beans and peas. Heat through for another 2 minutes. Its ready, believe it or not. Ladle into soup bowls and serve with a spoonful of Sacla' Pesto, a drizzle of extra virgin olive oil, some ground black pepper and generous shavings of Parmesan, just the way the Italians would.
