Rice salad with peas, rocket, tomatoes and capers

Ingredients

  • 250g Tilda steamed basmati rice (cooked according to instructions)
  • 1 x 250 g packet of fresh peas (podded) and blanched for 2 minutes
  • 1 x small packet of wild rocket, washed and drained
  • 2 x tbsp Sacla’ Reduced Fat Green Pesto
  • 2 x tbsp of capers
  • 1 x handful of Basil leaves
  • 1/2 lemon
  • 1 x lemon wedge
  • Sea salt and pepper

Method

  1. Cook the basmati rice according to instructions and allow to cook.
  2. Add the peas, rocket and capers
  3. Mix the pesto and the juice of half a lemon and add to the rice salad
  4. Top with a handful of basil leaves.
  5. Season to taste
