Roasted Salmon noodles with a Pesto and lime dressing

Ingredients

  • 2 x fillets of salmon
  • 1 x packet of Amoy straight to walk large udon noodles
  • 1 x handful of lightly cooked green beans (crunchy)
  • 2 fresh limes
  • 1 x handful of basil leaves
  • 1 x tbsp Sacla’ Reduced Fat Pesto
  • 1 x tbsp olive oil
  • 1 x chopped spring onion (optional)

Method

  1. Pan fry the salmon fillets with the olive oil until cooked or bake in the oven for approximately 20 minutes
  2. Allow to cool
  3. Flake the salmon and stir into the lightly cooked noodles (one minute is all that is required)
  4. Chop the green beans into 3 and add to the noodles
  5. Add one chopped lime (peeled)
  6. Add the pesto dressing made up of the juice of the other lime and all the Pesto
  7. Finish off with a sprinkling of basil leaves and some spring onion (optional)
  8. Season to taste
