Rice Salad with peas, pepper and Sacla’ Reduced Fat Pesto dressing.

Ingredients

  • 250g packet of Tilda Basmati Rice (cooked to instructions)
  • 300g packet of peas (podded)
  • 1 x fresh orange pepper chopped into small pieces
  • 2 x tbsp Reduced Fat Pesto
  • 1 x handful of flat leaf partly chopped
  • 1 x chopped spring onion (optional)
  • 1/2 lemon
  • Salt and Pepper

Method

  1. Add the rice into a bowl with the peas and chopped pepper and spring onion
  2. Mix in the Reduced Fat Pesto
  3. Add the handful of flat leaf parsley
  4. Squeeze half a lemon on the top to taste
