1 tablespoon olive oil 25g unsalted butter 1 red pepper seeded and thinly sliced 1 jar Sacla' wild mushrooms antipasto 150g onion, sliced salt and fresh ground pepper 8 egss, beaten 2 tbspns Sacla' Salsa Rossa 4 tbspns grated parmesan Fresh basil
Pre heat grill to high. In a large heavy frying pan, add oil and butter and heat till foaming. Add peppers, onion, a little salt and pepper. When vegetables are cooked add the eggs, basil, mushrooms and 2 tablespoons of parmesan. When the eggs begin to set add the rest of the parmesan and the Salsa Rossa. Put the whole thing under a hot grill to finish off.
