1 Red Onion
1 Pack of fresh Sacla' Spicy Roasted Pepper Sauce or 1 Jar of Sacla' Spicy tomato and pepper sauce
3 tsp of Mascarpone
4 Free Range Eggs
2 tbsp Pack of fresh Sacla' Classic Basil Pesto or 2 tbsp of Sacla' Classic Basil Pesto
Heat the oven to 180 C (160C Fan) 350 F, Gas 4. Heat a little oil in a pan and fry the chopped red onion, add the Sauce and the mascarpone and heat through.
Transfer to an oven proof dish, make 4 wells in the mix and crack an egg into each well. Bake for 15 minuts until the eggs are just set, then top with the pesto. Serve immediately with crusty bread.
