1/2 aubergine
250g Mozzarella cheese
1 x 300g jar of Dallaglio by Sacla' Diavola sauce
A drizzle of extra virgin olive oil
A Sprinkle of Parmesan cheese
A sprinkle of salt
Slice the aubergine and layer into a colander with a sprinkle of salt between each layer. Leave for 20 minutes to removes the bitter juices and then rinse with water.
Turn on the grill at 160 C and start layering the slices into an oven proof dish making sure they cover most of the surface. Pour over the jar of Diavola sauce and spread the contents over the aubergine slices. Now cut the mozzarella cheese into slices and lay them on the top of the sauce. Finally add a drizzle of extra virgin olive oil and a sprinkle of Parmesan cheese.
The tray is now ready to go under the grill. Leave it for approximately 20 minutes until the cheese has melted and is bubbling. Buon Appetito!
