Scrambled Eggs with Salmon and Oven Roasted Tomatoes

Italian Slow-Baked Tomatoes Marinated With Chilli
Ingredients

4 large free range eggs
2 tsp butter
2 tbsp milk
4 slices of smoked salmon
1 jar Sacla' Oven Roasted Tomatoes with chilli (available from Waitrose or the Sacla' online shop)
1 lemon
4 slices bread
extra butter for spreading in the toast
salt and pepper
carton fresh orange juice

Instructions

Preheat the oven to 200°C, fan 180°C , Gas Mark 6.

Remove the butter from the fridge to soften.

Place the 2 slices of smoked salmon on each dinner plate. Slice the lemon in half and place on each plate next to the salmon.

Break the eggs into a mixing bowl. Add 2 tsps of butter and 2 tsbps millk and beat well using a fork.

Place a saucepan on the hob and turn the heat up high. Pour the beaten egg into the saucepan and using a wooden spoon start to stir the egg.

As the egg starts to thicken, turn the heat down to medium and continue to stir.

The scrambled egg is cooked when there is no more runny egg.

Toast the bread and add to each plate along with a serving of the egg and the Oven Roasted Tomatoes.
