Italian Slow-Baked Tomatoes Marinated With ChilliItalian Slow-Baked Tomatoes Marinated With Garlic
Ingredients

1 jar of Sacla' Italian Oven Roasted Tomatoes with chilli (available from Waitrose or the Sacla' online shop)
200g smoked salmon
100g breadcrumbs
1 tablespoon extra virgin olive oil
10 black olives, pitted
Fresh sage
Fresh mint
Salt and black pepper

Instructions

In a bowl, mix the breadcrumbs with the oil, salt, black pepper and the finely chopped sage and mint leaves.

Drain the jar of Sacla' Italian Oven Roasted Tomatoes and cut into quarters.

Prepare the salmon into strips - 2cm wide by 10cm long.

Make 10 little balls from the breadcrumb mix with a piece of tomato inside.

Roll the salmon strips around the balls and place on a dessert spoon. Garnish with a black olive and some sage and mint leaves.
