2 skinless salmon fillets
190g jar Sacla' Fresh Coriander Pesto
You will also need 2 large squares of foil.
Preheat the oven to 200°C, 400°F, Gas Mark 6.
Place each fillet onto a foil square. Spoon over ¼ jar of pesto per fillet. Fold the top of the foil over a couple of times to ensure a tight close and seal in the cooking juices.
Arrange the salmon parcels on a baking tray and bake on the middle shelf of the oven for 10-12 minutes or until the salmon is cooked through.
Place the parcels on dinner plates, open up and serve with a crispy salad and this seasons new Jersey Royal potatoes. Buonissimo!
