This works well with any of your favourite vegetables.
We've chosen:
2 x Courgettes, sliced
1 x yellow pepper, chopped into chunks
1 x red pepper, chopped into chunks
2 tbsp Sacla' Classic Basil Pesto
25g Cheddar Cheese, Grated
Put your chopped veggies into a large bowl, add the pesto and mix together so everything is coated. Transfer to an oven-proof dish and bake in a hot oven for 20-30 minutes until the veggies are sizzling. Sprinkle with grated cheese and serve with meat or fish. This is delicious on it's own too and with crispy bacon rashers.
