1 jar Sacla' Coriander Pesto
225ml / 8fl oz milk
850ml stock (vegetable or chicken)
900g /2lb potatoes, peeled and chopped
1 large onion, diced
50g / 2oz butter
Melt the butter in a heavy saucepan. Add the potatoes and onion, tossing them in the butter. Season with salt and pepper, cover and heat for 10 minutes.
Pour in the stock and cook for about 15-20 minutes or until the vegetables are soft. Liquidise for a smooth soup.
Then add the milk and warm through.
Drizzle 1 tsp of Sacla' Coriander Pesto over each bowl of soup and serve.
