Chicken Breasts Courgettes Sacla' Pesto Sauce (any variety, but I prefer Classic)
This recipe is very simple and ideal for a BBQ.
Slice your courgettes into pieces about 1.5cm thick. Lay 3-4 pieces on the foil in a straight line. Spread 3 teaspoons of pesto sauce over the top of the courgette slices Lie your chicken breast over the top of the courgettes and pesto Season the chicken breast with salt and pepper according to your preference. Then add another layer of pesto and courgette on top of the chicken breast. Now fold up the foil into a parcel to hold the courgette layers in place above and below the chicken breast. Place your foil parcel on the barbecue for 10 mins before turning over and cooking for another 10 mins on the other side. (Note: you may need to adjust cooking times according to how hot your barbecue is. Always ensure the chicken breast is cooked all the way through before serving.)
