Char-Grilled Aubergine Pesto
Ingredients

Any vegetables suitable for roasting.
I love
aubergines
red onion
courgettes
carrots
red peppers Any Sacla' Pesto

Instructions

Clean and chop all veg to a similar size and put in an ovenproof dish. Stir in the pesto so all veg is coated and cook for approx 15-20 mins in a hot oven.
