Classic Basil PestoIntensely Italian Classic Basil Pesto
Ingredients

1.5kg King Edward or Maris Piper potatoes, peeled
2 tbsp olive oil
1/2 jar Sacla' Classic Basil Pesto or 1/2 pack of Sacla' Fresh Classic Basil Pesto

Instructions

Preheat the oven to 200°C, Gas Mark 6.

Next cut the potatoes into bite-sized chunks and bring them to boil in a large pan. Simmer for 7 minutes. Meanwhile, pour the olive oil into a large roasting tin and place it in the oven to heat up.

Drain the potatoes and return them to the pan. With the lid on the pan, shake the potatoes to roughen the edges - this will help to guarantee a lovely crispy coating.

Then spoon in the Classic Pesto and toss until all the potatoes are evenly covered.

Carefully add the potatoes to the hot roasting tin and spoon over any remaining pesto sauce. Pop them in the oven to roast for 45-50 minutes, turning once or twice during cooking, until crispy and delicious.
