800g potatoes (peeled and cut into even sized chunks)
40g butter
3 tblspoons milk
2 tblspoons of Sacla' Classic Basil Pesto
salt and freshly ground black pepper
Few foods are more comforting than a bowl of hot, creamy mash. Ring the changes to everyday meals wiht this super easy twist on Classic mashed potato.
Place the potatoes in a pan of salted water, bring to the boil and then simmer for 20 minutes until tender.
When the potatoes are cooked, drain them and return to the pan then cover with a teatowel for a few minutes to absorb any extra moisture. Add in the butter and milk and mash well until smooth with no lumps then season lightly.
Now simply stir 1 or 2 tablespoons of Classic Pesto through your cooked mash (depending how strong you want the taste to be). Serve with lamb, chicken, sausages or whatever your favourite mash deserves!
It's also a wonderful dish to experiment with and add different flavours to; try the Sun-dried Tomato Pesto in mash to top shepherd's pie or serve Wild Garlic Pesto mash with sausages or steak. The list is endless!
