4 x 125g (4oz) salmon fillets, skin on
4 tbsp basil or coriander pesto
50g (2oz) fresh white breadcrumbs
25g (1oz) parmesan, grated
Preheat oven to 200oC (180oC fan) mark 6.
Arrange the salmon fillets on a non-stick baking tray.
Spread 1tbsp of the pesto on top of each fillet. In a small bowl, mix together the breadcrumbs and parmesan, then press a quarter of the mixture on top of each fillet.
Bake the salmon fillets for 10-12 min until the fish is cooked through.
Serve with a crisp green salad or seasonal vegetables.
