1 tbsp of olive oil
8 sausages
1 onion, roughly chopped
2 garlic cloves, chopped
400g can of chopped tomatoes
2 tsp Sacla' Sun-dried tomato paste
2 large red or yellow peppers, chopped
6-8 small new potatoes, cut larger ones in half
a pinch of fresh thyme leaves or rosemary stalks
500ml of vegetable stock
1/2 a bag of baby spinach or rocket
Heat the olive oil in a large frying pan and add the sausages, onion and garlic. Cook until the sausages are brown and sticky and then move everything to a large saucepan. Now stir in the tomatoes, peppers and Sacla' Sun-dried tomato paste. Add the potatoes and herbs and pour in the stock. Bring it all to the boil before simmering it for twenty minutes or so. Add a little more stock if you think it needs it. When you stir through the spinach or rocket it will wilt with pleasure, which is exactly what it's supposed to do. Remove from the heat immediately, season to taste and serve with some crusty bread and chilled company (definitely not the other way round.)
