Classic Basil Pesto
Ingredients

3 tbsp Sacla' Classic Pesto 500g / 2 oz frozen peas 4 medium potatoes, peeled and cut into cubes 1 litre hot vegetable stock

Instructions

Place the peas and potatoes into a large saucepan, then add the stock. Bring to the boil and simmer for 10 minutes, until the potato cubes are tender. Remove a third of the peas and potatoes with a slotted spoon and set aside. (this is so you still have some chunky vegetables in your soup.) Contiune to stir through the soup and blend all ingredients until smooth. With the remaining vegetables stir through the pesto and return the mixture to the soup. Heat through and serve.
