Pappardelle with Red Peppers & Walnuts

Vine-Ripened Tomato & Mascarpone Stir-in
Ingredients

2 sweet red peppers
500g of Pappardelle
one chopped shallot
100g of walnuts
extra virgin olive oil
a handful of chopped parsley
a jar of Sacla' Tomato and Mascarpone Stir Through sauce

Instructions

Heat 1 teaspoon of olive oil in a large pan and let simmer the shallots for 2-3 minutes.

Then roughly chop the red peppers, add it to the pan and let it cook for 4-5 minutes.

When the peppers have softened add Sacla' Tomato & Mascarpone Stir Through sauce and let it simmer for few minutes.

In the meantime cook the pappardelle.

When the pappardelle are ready pour into the pan with the sauce and stir for few minutes at high heat.

Sprinkle the pasta with some roughly chopped parsley and some ground walnut.

P.S. Slightly toasting the walnuts before use will give an extra edge to the recipe.
