2 x 150g trimmed monkfish peices 2 tbsp Sacla' Wild Rocket Pesto 8 slices smoked pancetta 1 pepper, sliced handful basil leaves
Preheat the oven to 200°C, Gas Mark 6 Spread the Sacla' Wild Rocket Pesto over the monkfish and arrange a few basil leaves to top. Wrap each monkfish with 4 slices pancetta. Place the fish in a frying pan and cooke until the pancetta starts to crisp. Move the fish onto a baking tray with the peppers and cook in the oven for 15 minutes. Remove and serve.
