12 slices pancetta
1 jar Sacla' Mixed Bean Antipasto, drained (available in Waitrose or the sacla' online shop)
2 large carrots, peeled and sliced
1 red onion, peeled and sliced
175ml glass dry white wine
1 tbsp olive oil and extra to serve (use the oil from the antipasto for added flavour)
2 sprigs thyme
2 garlic cloves, crushed
handful parsley
Fry the pancetta until crispy and golden.
In a pan add the olive oil, carrots, onion, garlic and thyme. Cook for 5 minutes, stirring continually.
Add the wine and turn up the heat for 1-2 minutes until the alcohol has evaporated.
Add the Sacla' Mixed Beans and continue to cook for a further 5 minutes or until the beans are warmed through.
To serve, toss through the parsley and crispy pancetta and drizzle with oil.
