Jersey Royal Potatoes with Coriander Pesto
Serves: 4, On the table in: Up to 30 Minutes
Ingredients
- 500g Jersey Royal potaotes (or other small new potatoes), scrubbed
- ½ x 190g jar Sacla' Coriander Pesto, Wild Garlic Pesto or Classic Basil Pesto
- salt & freshly ground black pepper

Instructions
Put the potatoes in a pan of cold, salted water. Bring to the boil, then reduce down to a simmer and cook for 10-12 minutes until tender, depending on their size.
Drain in a colander, transfer to a warm serving bowl and lightly season. Spoon over the Pesto, lightly shake the bowl to coat the potatoes and serve whilst hot.
