Jersey Royal Potatoes with Coriander Pesto

Serves: 4, On the table in: Up to 30 Minutes

Ingredients
  • 500g Jersey Royal potaotes (or other small new potatoes), scrubbed
  • ½ x 190g jar Sacla' Coriander Pesto, Wild Garlic Pesto or Classic Basil Pesto
  • salt & freshly ground black pepper

Instructions

Put the potatoes in a pan of cold, salted water. Bring to the boil, then reduce down to a simmer and cook for 10-12 minutes until tender, depending on their size.

Drain in a colander, transfer to a warm serving bowl and lightly season. Spoon over the Pesto, lightly shake the bowl to coat the potatoes and serve whilst hot.

The perfect potato side dish, whichever Sacla' Pesto you decide to use!
