Any leftover pasta and sauce
2 eggs
1 x packet Sacla' fresh Tomato Pesto or 190g jar Sacla' Sun-dried Tomato Pesto
Grated Parmesan Cheese
Sizzle your leftover pasta and sauce in a frying pan for a few moments. Pour over 2 beaten eggs and cook for several minutes until the egg is golden around the edges but still slightly gooey in the middle. Transfer your frittata onto a plate and add a generous dollop of Sacla' fresh Tomato Pesto in the middle. Fold the frittata in half and sprinkle with freshly greated Parmesan. That's breakfast, lunch or dinner sorted pronto!
